Artichoke Crostini

For 4 servings you need:

1 jar marinated artichoke hearts, drained and choped

6 green onions, chopped

2 tablespoons mayonnaise

5 tablespoon grated Parmesan cheese

12 slices French bread

Red bell pepper for garnish (optional)

 

How to make:

- Preheat broiler. Combine artichokes, green onions, 3 tablespoon cheese and mayonnaise in small bowl, mix well

- Arrange bread slices on baking sheet. Broil 4 to 5 inches from heat source 2-3 minutes on each side or until lightly browned. (you can grill them, too)

- Spoon about 1 tablespoon artichoke mixture on each bread slice and sprinkle with remaining cheese. Broil 1-2 minutes or until cheese is melted and lightly browned. Garnish slices with red bell pepper if desired.

Prep and cook time: apx. 25 minutes

Interesting: Crostini means 'little breads' in Italian.
