Christmas… WithLuv presents some special holiday recipes!
This special time of the year as we all know
is Christmas. We do not share this time
alone, rather we share it WithLuv. We make the most of the opportunity of
Christmas and embrace the spirit of Christmas with our loved ones, friends and
family. Some may rejuvenate the
Christmas spirit over lunch or dinner - others may make the opportunity of gift
sharing. At WithLuv we enjoy the occasional wine and dine, especially on the
wonderful holidays of Christmas. Below
are some recipes that can help you fulfil the enjoyment of Christmas with your
loved ones.
WithLuv Fruit pancakes
- 250g plain flour
- 1 tablespoon baking powder
- 55g caster sugar
- 2.5g salt
- 375ml buttermilk
- 2 eggs
- 35 g sultanas
- 35 g finely diced currants
- 30g finely diced glacé cherries
- 50 g mixed diced candied
- Butter or cooking spray
- Maple syrup and/or low fat-ice-cream, to serve
- Makes approximately 6-8 pancakes (depending on the size).
Method
Step 1: Sift the baking
powder, flour and salt into a large mixing bowl.
Step 2: Pour the
sugar in another mixing bowl along with buttermilk, eggs and melted butter - mix
until it amalgamate.
Step 3: Combine
both Step 1 and step 2 together and mix them together until it is mixed
Step 4: Add and
mix the sultanas, finely diced currants and diced candied together into the
batter.
Step 5: When ready
to cook heat the fry pan on a medium and lightly grease the pan with butter or
cooking spray.
Step 6: Gently
pour a large spoonfuls of batter into the frying pan until bubbles burst on the
surface and the edges start to go dry. Turn and cook until both sides is golden
and cooked.
Step 7: Repeat
remaining batter from step 5, using more butter or cooking spray when
necessary.
Step 8: Serve ‘WithLuv
Fruit Pancake’ with maple syrup and/or low fat ice-cream. Enjoy.
Gingerbread men Withluv
- 70 g soft brown sugar
- 2 tablespoons golden syrup
- 2.5 g grounded nutmeg
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 1 egg
- 1 egg (white)
- 1 pinch grounded cloves
- 100 g butter
- 2.5 g baking soda
- 230 g plain flour
- Currants (to decorate)
- Smarties (to decorate)
- 100g pure icing sugar
- 6-8 drops of food additives (any colours that you preferred
for decorating)
Method
Step 1:
Place the butter and sugar in a large bowl and beat with electric beater until
pale and creamy.
Step 2:
Add the golden syrup and egg in the same bowl and beat until it is amalgamate.
Step 3:
Gently sift the plain flour, baking soda, soft brown sugar, grounded nutmeg,
cinnamon, ginger, grounded cloves in to the same bowl and whisk it together.
Step 4:
knead the dough with your hands until it is smooth and elastic.
Step 5:
Place the dough in the bowl and cover it with plastic wrap and place in the
fridge for approximately 45 minutes.
Step 6:
During that time Preheat oven to 180°C.
Step 7:
In a dry bowl, place the egg white and beat the egg white until it’s in the
soft creamy form. Then add icing sugar and continue to beat it until it is in
the stiff states. Divide the amount of icing into bowl(s) and add 6 – 8 drops
of food additives (colour of your choice) and stir until combined. Cover the
bowl(s) with plastic wrap and place in the fridge.
Step 8:
Roll the dough out on a lightly floured surface and cut out the gingerbread men
cookies. With an offset spatula lift the cut out cookies onto the baking sheet.
(Repeat this step until there no more dough left).
Step 9:
Bake in the oven for 8 – 10 minutes
until its golden brown. Remove the gingerbread from the oven and cool on the
baking sheets for a few minutes.
Step 10:
Decorate your gingerbread men with currants, smarties and icing (icing can be used
as glue to attach currants and smarties.)
WithLuv X’mas Snowflake (For the adults of course...)
- 150 ml pear liqueur
- 300 ml Milk
- Crushed ice cubes
- Lemonade / lemon Lime Soda / tropical fruit
- Mint leaves
- Approximately 6 servings
Method
Step
1: Mix together with pear liqueur with milk,
lemonade and ice in a martini shaker.
Step
2: Pour the mixture into cocktail glasses and
garnish with mint leaves.
WithLuv X’mas snow shakes (and for the younger ones...)
- Lemonade
- 2 scoops of vanilla
Ice cream
- Jimmies
Method
Step 1: Put 1 scoop of vanilla ice cream in a
milkshake glass then slowly add lemonade until it is ¾ full. Gently mix the
lemonade and the vanilla ice cream which will create a milky frothy texture.
Step 2:
Add an additional scoop of vanilla ice cream in the snow shake and sprinkle with
some jimmies.
